Healthy Eating | Chocolate Zuccini Bread

I made this deeeeeeelicious chocolate zuccini bread yesterday with some of my spelt flour.  It turned out really good, and was very moist and chocolatey.  As you can see from the pictures, half the loaf had vanished before I had the chance to take pictures of it. :)

Chocolate Zuccini Bread

Makes 1 loaf
  • 1 3/4 C whole spelt flour
  • 1/2 C unsweetened cocoa
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 C shredded zucchini squeezed and drained
  • 1/3 C sour cream
  • 2 eggs
  • 1/4 C butter, melted
  • 3/4 C brown sugar or coconut sugar
  • 1/2 C water

Preheat oven to 375 degrees.  Prepare a standard sized loaf pan by greasing it or lining with parchment paper.
Mix together the flour, cocoa powder, baking soda, baking powder, and salt in a bowl and set aside.  In a larger bowl, mix together the zucchini, sour cream, eggs, melted butter, sugar and water.  When combined, add the flour mixture and mix well.  Pour into the prepared loaf pan and place in the oven for 50-55 minutes or until a toothpick or wooden skewer comes out clean.
